Honey Snaps

 
 
Today I finally made Honey Snaps.  I have been wanting to make these for ages.  I used the honey I was given for my birthday from some lovely neighbours.   I often fantasize about bee keeping myself but why bother when we have very generous neighbours and we can buy our honey from here.    Maybe one day I'll do it too.....
 Anyway these were super easy to make and very yummy (perhaps a little sweet.....)
Ingredients: 3 tbspn honey, 2 tblspn sugar, 50 g butter, 1/2 cup plain flour, 1 tsp baking powder, 1/4 tsp salt, 1/2 tsp cinnamon (or ginger)

Preheat oven to 180.  In a saucepan heat  butter, honey and sugar until melted.  Take off heat.  Mix all dry ingredients into the saucepan and mix well.  Drop teaspoons of mixture onto cold tray.  Bake for 10 mins.
There have been some cold and frosty mornings lately.  Brrrrrr.
I finally finished these presants.  I did the fronts ages ago but had to finish off the backs.  I should really make more of an effort to actually finish things.  It does feel good when you do.  I am definately a starter.  I was about to start a new knitting project but resisted - i should finish Sunny's dress first!!
 
The oranges are good at the moment.   Check out how big one of them is - they are all from the same tree!   An orange a day keeps the doctor away - well I hope so anyway! (It hasn't worked for poor Django who has been very sick these past few days, but he usually only eats half an orange, maybe that's the problem???).

The Winter Solstice

 
 
Yesterday was the winter solstice.  This is the huge bonfire ready for Saturday night's Solstice party.
We spent the day having a lovely picnic and explore in the sun down at Urunga.  It was so peaceful and warm and beautifully blue and scenic.

I Believe This

I  am currently reading a fantastic book  -  "I Believe This" edited by John Marsden.  100 eminent Australians write a couple of pages each on what they believe.  I am loving it and finding it very interesting and inspiring indeed.  I haven't quite read them all yet but several are really resonating with me.

One paragraph I would like to share today is from Archie Weller....

"I believe in LIFE: L for Love, I for Intellectual Interests and Imagination, F for Friendship, Fun and Frolics, E for Excitement.  Every morning begins a new life for me and in each day I strive to find three beautiful, unusual things: a song bird, a butterfly, a smile on a stranger's face, the look in the eyes of my lover, a dog chasing its tail, a child on a swing, a phrase in a poem or book.  I devour each day with a fierce intensity".

I like this.......  I would also add F for family ( and perhaps food?)

Its Raining Again

 
 
 


It is raining again, but I have had a lovely day - a very relaxing one!  I have been doing some knitting whilst watching an old film (A passage to India).  I didn't get to finish the film as there was a blackout but I did get quite a way with my knitting.  I am feeling quite pleased with myself as I am attempting a new pattern 
 (I usually stick to very easy straight type knitting) using circular needles and I have had to learn a few new things.  I have finished the trickiest bits and it has turned out pretty well.  Of course I did make a bit of a mistake which I couldn't figure out so I just knitted over the top of it and you can't really notice  - never mind (Wabi Sabi!!)

Oh yeah, Sunny has a fringe now.  She can see better and it looks very cute! Django also has had a hair cut, his beautiful blond locks are gone (but so are the nits!)
